 Now, of course, I may be wrong, but I returned it and ordered a knife costing $10 more which I hope will be worth the price. I'm sure you can buy knives costing less than half the price which are probably 60 to 70 % as good, but if you desire perfection, which I imagine is the motivation for someone buying a knife costing as much as you'll pay for this one, you won't get it buying this knife.

 However, when my knife arrived, it was dull by my standards. A simple test I use to gauge the sharpness of my kitchen knives, which, by the way are all of Japanese manufacture and superb, is whether they will cut a paper towel when drawn across the edge. This knife failed, even when I applied a lot of pressure. When I examined the edge, I found the taper on one side ~ twice that on the other; furthermore, I found the angle of the taper on the heel of the broadly tapered side of a different angle than the rest of the edge

I am most unhappy with this knife. First off the thing rusts very easily. Do not leave it in water for any length of time. My particular knife has either impurities or poor bonding between the blade and the tang

Best choice for snobs

 I will try to update this review in a few months to see how sharp it stays and how well it sharpens.

After owning a number of cheaper knives, I bought this paring knife at the recommendation ofAn Edge in the Kitchen: The Ultimate Guide to Kitchen Knives -- How to Buy Them, Keep Them Razor Sharp, and Use Them Like a Pro . After using it for two days, I love it. Great weight, balance and shape. Very sharp, even with the manufacturers out-of-the-box sharpness (I actually had to adjust how I use a paring knife to avoid cutting myself)

Great knife

 This knife is not as pretty as the Shun it replaced, but it's much better quality! (I say this because it didn't immediately start to rust after the first use like the Shun did) I've been using it for a few months now with no signs of wear.  This knife has a very subtle design that doesn't jump out as much as the Shun did immediately, but it's grown on me since owning the knife. I get bummed out when I'm working on something in the kitchen that requires a different knife! This will definitely not be the last Mac knife I purchase; I can't recommend it enough.

With a razor-sharp, moderately long blade, this knife made every task seem effortless. Its tip was the narrowest in our lineup, so it made near-surgical incisions, turning tightly around strawberry stems and pineapple eyes so that more of the fruit surrounding them was left intact. And its blade was also narrow at the heel, making it particularly adept at peeling even the most knobbly pieces of ginger. Lightweight with a relatively grippy wood veneer handle, it was also comfortable to hold for long periods.

 It is a clear winner over a similar priced Dalstrong (an Amazon promoted brand). Stays much sharper and is like comparing a fast running shoe to a farmer's dirt clod kicker.

 Sharpness is the other. This is my first MAC and won't be my last. This is going in my knife block with my Tojiro DP knives and select Wusthofs.  It is similar in size to a cheap Henckles I have, but obviously way better quality and stays very sharp for longer
