The most expensive part of this kit broke very easily and splintered into a brick of cheese I was cutting. If you are a sushi chef, then these knifes may be beyond great for you, but if you intend on cutting thick meat, cheese, or anything else with the larger blade of the set that is considered somewhat difficult to cut, or thick, do not expect the knife to last long and be extremely cognizant of small peace’s of the ceramic knife breaking in your food.  It almost happened to me but I caught it. I have cheaper ceramic knives that are tougher, more rugged, and Cheaper (but much THICKER than these knifes which leads to the forever life span ceramics advertise). Very important to know what you are buying here

 I've used the pairing knife to pit cherries (not prying! just slicing around the pit) and there is no hint of staining on the blade. And anyone who worked with a lot of fruits and vegetables knows that cherries are one of the most staining fruits around.  Overall I think anyone buying this set needs to be aware that a ceramic blade is a specialized tool for a specific task. It is a great addition to the toolkit if you are slicing a lot of fruits and vegetables and don't want to have to hone your blades after every few uses

 I think if the handle it not providing enough grip then you are trying to cut something you should not be cutting with this blade.  For people who have said the blade isn't sharp I think they may have gotten a badly honed blade. As I examined the edge very closely I noted that the way it was sharpened suggests to me that it was done by hand. What I mean is that the honed part did not have a uniform thickness across the entire knife blade

  First, anyone buying this set needs to understand that material physics go like this, the harder something is the more brittle it is. Ceramic blades are extremely hard and thus must be extremely brittle. So yes, you have to be careful with this set but that is not Kyocera's fault it is just the way that materials work. For something to be both very hard and not brittle it would be Adamantium and that only exists in comic books

 I bought a new set rather than use a chipped blade because I'm afraid I might chip off another piece now that the blade isn't 100% straight I may not notice and could end up with a chip in my food (yikes). It was really my own fault, I dropped a pretty heavy glass bottle on it. Obviously you can't chip a metal blade so that is a drawback of ceramic. However, this blade has remained razor sharp through 3 years of fairly heavy use

As warned, I cut myself the third time using it, but they're so sharp that makes cutting hard vegetables a snap - I can't even go back to my old knives anymore (they've been put to hibernate) Now, they do stain, especially after I cut carrots, the white blade turns a little orange despite prompt washing, but since they make my life so much easier, a little stain is really no big deal. The real problem is, because it's ceramic, it's very fragile. When I goofed and left the Santoku on the rack, it slid into the sink and you guess it, it chipped, right in the middle of the blade

 I understand that there are issues with installing handles on ceramic blades, but there must be a better material. You can feel the raised seam that runs down the center of the handles, they are a little slick when wet, and they otherwise look and feel low grade. I would gladly pay more for the same blades with upgraded handles.

 I do suspect that a fall onto a tile floor would not end well for the blades. Unfortunately, the molded plastic handles feel cheap and are not all that comfortable.   Basically seems like a replica of a knife I would really like and use a lot, with a better handle and less blade flex.  Spyderco fan, but don't get sucked in by the name there are better knives in this price range. I have a similar plain edge victorinox that is much better.  Final word, I'm sure I'll find some task it can do well, but after I having used it awhile, I can say an easy I would not have bought it

  The serrations are a very functional pattern, but lose their utility because of how flimsy the blade is. It tends to wander around and not be that controllable as other knives. I mean it has trouble with an apple, so, disappointing. Not getting through it, just feeling like it is wandering

 I apologize. The blade is 6 and a half inches long with what looks to be. If I put it on here, measured about a 6 inch cutting edge, this knife is made in Japan and Seki City and it's made of MBS 26.  I just recently got an email from a vendor that I buy a lot of knives from letting me know that these were in stock, and I ordered one immediately, there's a serrated version as well that I'll be ordering and they also have blue handles. I did not see a blue handle plain edge; it doesn't mean that it doesn't exist. Then this handle material is what I believe. They'Re called thermo lean and it's a polymer, a mold injected handle that has this a little bit of a step design which is actually very comfortable

Hi, am a widower so I am doing all the cooking which I really enjoy, also I am a big fan of the Spyderco brand ( am a edged weapon collector and have several Spyderco blades) and one day I saw these kitchen/cooking blades so I decided to try them, I have a few now and they are just GREAT! I use them constantly, they stay sharp, are easy to manipulate, am so glad to have them! BUT, I do wash my dishes by hand and 99% of the time I dry them and put them away, well Sunday night one of my favorite program was on so I let my dishes dry on a mat in the kitchen, I got a bit of CRS and forgot about it and went to bed, next morning I checked and put away all those dishes ( not many since it is only me and my doggie!), I noticed a brown spot on one of the knives, right where the blade meets the rubber handle! I thought I didn't clean it properly but it wasn't dirt! It was RUST! All across the bottom on both sides, one spot actually dug in the Steel! Now the knife had been left for approximately 9 hours! The rest of the blade was perfect, Not a spot of rust, just by the handle! When I grabbed the other knife, you can guess what I saw! That's right! The exact same thing,at the same area! So to make a long story short, make sure that when you clean your awesome blades that you dry them real well before you do something else! I can't see what's under the rubber handle but I bet it's not pretty! That's why the 4 stars instead of 5! BTW I also have Cold Steel blades and in a couple of years using that brand have never seen rust! I still prefer the Spyderco blades, just wished I had known!

  Thin blade (great for slicing!), great overall shape. Comes super sharp. Handle is plastic, but more than reasonable for the price and the molded shape of the handle is good for gripping.  It's a nice size for sitting down and cutting up a fresh fruit or vegetable to eat

Great Knife!  It's All Good

 The blue handle makes it easy to find in the knife rack. Compared to high-end German knives, the blade is thinner--good and bad--lighter, more flexible, but less powerful. Not a good choice for chopping or filleting, but for most other things, it shines. I might grind the tip to a rounded or flat profile so as to get the last of the mayo out of the jar when making a sandwich
