 I'Ve sold all different types of knives and knives have evolved over time. When i first started selling knives, we didn't have japanese knives on the market. It was all just straightforward, french style knives made in you, know, germany, france, uh and a few other places, and you know the the way in which knives have changed has been tremendous. You know german knives have changed dramatically because of japanese and you know, japanese makes a good knife for the western market

 So i was, you know open to giving it a try uh, and what i wanted to do was actually compare it against. You know a good old workhorse, and that is this willing pro so zwilling pro makes you know really the the benchmark of a standard german blade. It has evolved. As i said over the years, you know the zwilling pro doesn't have a full bolster anymore or really a bolster at all, and it's all about getting up and using a pinch grip on on the knife and not coming to the end of the bolster and holding The knife in this position so getting up on the knife and really being more connected to the blade so dwelling pro you know it like, i said the benchmark

 You know to stop you from it going too far forward um yeah, so it's i'm totally fine with the museum. So zwilling pro okay, so initial first cut uh. It just has a little bit of a nicer feel through the onion. So just the way in which it drops through it is a sharper sharper blade it comes sharper

 I put the pan back on a medium-high heat and used a paper towel to rub very thin layers of high smoking point of vegetable oil onto the cooking surface. The oil will start to bond itself to the surface of the pan, and the color of this will give the pan that seasoned brown, black color and i'll do about three thin coats of oil, letting it polymerize before each coat and i'll call it good all right To review the mizen carbon steel pan, i fried some eggs sunny-side up using some butter and was i able to swirl the egg around like their videos yeah, it wasn't bad. I made some late night tacos and threw a random piece of salmon in there just to see if it would stick and it stuck a tiny bit, but it still came off cleanly after some spooning i put in a teaspoon or so of oil and made some Scrambled eggs last minute put a cheese crust on my taco maintenance wise. If i cook something relatively saucy i'll run the pan under hot water and scrub it with a soft bristle brush, then i'll either wipe it dry or put it over some heat and give it a quick rubbing of oil

 If this process is done and maintained correctly, carbon steel is chemically very reactive. It reacts with oxygen in the air and water and forms red iron oxide, aka rust right now, we're going to heat the carbon steel until the steel surface begins to oxidize, but in this case with the high heat it will oxidize to black iron oxide, also known As magnetite this black iron oxide finish will give the steel a beautiful black, blue aqua appearance and the surface adheres well with oils and becomes very rust resistant. So i had my burner on the highest heat and i tipped and moved around the pan towards the end. To try to get that bluish finish on the full interior of the pan, and this took a total of about 12 minutes little tip
