 Since I was looking for something particular and based my decision partly on that factor, I'm knocking a star off. I'd only take half a star off it was an option. I'm putting the review on this knife because it's specifically a santoku and should have a single bevel as part of the style. The other 2 knives were a paring knife and a chef's knife

 Since he lost his good knives and had some fairly lousy ones that wouldn't keep an edge to work with, I decided to get him some decent ones. I was looking for Japanese style, single bevel and reasonably high carbon steel. These seemed to fit the bill given my budget.

I bought this knife and 2 others in this line as a gift for a friend who is a fan of Japanese style knives. He's also a metalsmith and previously worked at a 5 star restaurant, so he knows knives. In summary, buy this knife if you need a budget-oriented chef's knife for your kitchen. This is a safe and good knife to use for all prep work except the most extreme chores which are best left to something heavier / thicker.

I've used this knife (8-inch Chef) for the past three years in an active home kitchen environment.

 The geometry of the blade is such that it slices very nicely through most veggies and meats; it is thin for a 8-inch chef's knife. At this price point, this steel is top notch. I have medium-sized, male hands and the handle fits perfectly.

as i said i almost never use this knife, but gradually come back to it b/c my other gyutos just don't "feel" as good, this has a nice weight to it. (slow it's become a everyday use knife, instead of a reference point)

out of the box, it's one of the sharpest blades i've encountered, most japanese knives come a bit dull, expecting you to do the laborious 2hours worth of wetstoning.

First, the handle feels like it's made of hollow plastic, which makes it pretty light. This means that for dicing "tough" (relative to sushi) pieces of poultry/meats such as chicken breast, I have to apply a lot of pressure and long strokes to slice the meat all the way through. This eventually gets pretty tiring for the hand. A heavier handle would give the knife better balance and let the knife do more of the work

 With a chef's knife, I can angle it downward toward the food and use the weight of my arm to rock the blade and slice food very easily. On this knife, the blade angle is mostly parallel with the handle, meaning that my wrist has to do most of the work to apply pressure and I have to use long strokes to slice. This knife's thin and straight handle gets uncomfortable under this pressure after awhile because it's not very ergonomically shaped – unless you have really small hands, maybe. If the handle had a more natural/ergonomic fit with the hand, I'd give this knife more stars

Great for slicing sushi, but only OK for dicing lots of chicken

This is a solid knife, however, the handle is made of cheap plastic which makes the whole product feel cheap.
